Item 3
A clear board changes how a worktop looks. Cut from transparent acrylic, this one lets the surface underneath show through, so a marble, oak or painted worktop keeps its character instead of being covered over by a slab of plastic or wood. It comes in two sizes, 45 by 35 centimetres and 45 by 40 centimetres, both of them generous enough to break down a chicken or to line up a full board of vegetables.
Acrylic has practical advantages beyond the way that it looks. It takes no colour and no smell from onions, garlic or fish, so the board that prepared last night's dinner does not go on to flavour this morning's fruit. It wipes down to properly clean rather than merely looking clean, which matters a great deal on a board. The underside is finished to grip the worktop rather than to skate across it, so the board holds still while you work against it.
A board is only as safe as it is steady, so set it on a dry worktop and press it down before you start, and keep the fingertips of your guide hand tucked back behind your knuckles. Use a sharp knife, because a blunt one slips. Acrylic is not heat-resistant, so never rest a hot pan or a baking tray on it. Wash it in warm soapy water rather than a dishwasher, and store it flat.
