Diatomite behaves differently from a cloth mat. It is a porous mineral, and instead of holding water in fibres it draws it into the body of the mat and releases it to the air, which is why a washed pan set down on one leaves a ring that has gone within minutes. That makes it useful next to a sink, under a draining rack, or along the strip of worktop where kettles and jugs get filled and inevitably drip.
Three sizes are offered: small at 41 by 51 centimetres, medium at 50 by 60, and large at 61 by 91, the last long enough to run the width of a double drainer. The mat is slim enough to tuck away upright between uses, and the surface has a soft velvet nap over the mineral core with a backing that grips the worktop. Four plain colours are available, beige, blue, light grey and dark grey.
Lay it on a clean, dry, flat surface and smooth it down so no corner stands proud, because a raised edge on a floor is something to trip over and on a worktop is something to catch a pan on. Do not set a hot pan, tray or lid straight onto it. Diatomite is a rigid mineral and will crack if dropped or folded hard, so store it flat or upright. It is machine washable and can be vacuumed between washes.
