EdgeSharp Four Stage Knife Sharpener

Most kitchen knives are not blunt so much as neglected, and a three-stage pull-through will bring almost any of them back. This one works through a coarse tungsten slot to reset a damaged edge, a fine ceramic slot to refine it, and a polishing stage to finish, with a fourth slot for scissors. The angle adjusts between fourteen and twenty-four degrees.

That adjustment is what lifts it above the usual fixed-angle sharpener. Japanese blades are ground much more finely than European ones, and forcing a fifteen-degree edge through a twenty-degree slot removes far more steel than it should. Setting the angle to match the knife means fewer passes, less metal lost, and a knife that lasts considerably longer.

The body is ABS with stainless steel fittings, 17.5 by 4.5 by 7cm, with a silicone base that grips the worktop so the unit stays put while you pull. Two sharpeners are supplied, so one can live in the kitchen and one in a caravan, workshop or holiday let. Sharp blades and moving abrasives: keep fingers clear of the slots, pull the blade away from you, and store it out of reach of children. A few light pulls every couple of weeks will keep an edge in far better shape than a heavy session twice a year.
