Honeycomb Stainless Steel Frying Pan, 30cm

A 30cm frying pan built from seven bonded layers, with a honeycomb pattern etched into the cooking surface. The raised steel of the honeycomb sits slightly proud of the non-stick coating below it, which protects the coating from a metal spatula and is why a pan of this type outlasts a conventionally coated one by a wide margin.

The layered base spreads heat evenly right out to the edge, so nothing catches in a hot ring at the centre while the rim stays cool. It works on every hob including induction, and the coating is PFOA-free. The handle stays cool on the hob and is shaped so the pan can be lifted and tipped one-handed even when it is full.

It is oven safe, which makes it practical for anything that starts on the hob and finishes under heat, and it can go in a dishwasher, though washing it by hand keeps the etched surface looking sharper for longer. Use a moderate heat rather than a fierce one; stainless steel holds heat well and a pan this heavy rarely needs a burner at full. Give it a minute to come up to temperature before anything goes in, and the honeycomb surface will release food far more cleanly than it does from a cold start.
